What We Do and Why

We strive to offer fresh and delicious nut butters that can be enjoyed for breakfast, lunch, dinner, and all the times inbetween.  To accomplish this, we focus on four aspects of our nut butter process.    Raw ingredients:   All of our nuts are unroasted.    Soaked nuts:   We soak our nuts in salt water for up to 24 hours.  This removes or reduces phytic acid, removes or reduces tannins (bitterness), neutralizes enzyme inhibitors, encourages production of beneficial enzymes, increases the amounts of vitamins (including B), and partially breaks down proteins to make ready for absorption. These all work together to aid in digestion.    Dehydrated:   After soaking the nuts, they are drained, rinsed, briefly soaked again, then drained again. They are then put directly into our commercial-grade dehydrators.  The temperature in the deydrator never exceeds 105°, which keeps the nut in a raw state, preserving those living enzymes.    Stone-Ground:   We use a small batch, low-temperature stone grinder to grind our nuts to the perfect consistency. The stone grinder is able to slowly crush the nuts over many hours, releasing the natural oils from the nut.  We do not try to speed up this process by adding in any extra oils.  The final result is a nut butter so smooth and rich, with its own natural oils and flavor.
